It's a single yarn that hasn't been plied, but is strong and soft.
 
Silks like this dye beautifully, giving any colour vibrance.
 
Suitable for knitting, crochet, weaving, tapestry... 
If knitting, keep your work in a silk pillowcase (or similar) to protect the yarn from rubbing.
If weaving, it'd be best as a weft yarn.
